Where It Comes From

Bondi Blend is our signature house coffee, designed to be dependable, balanced, and quietly expressive. It brings together specialty coffees from Colombia and Brazil, each selected for both quality and consistency, and sourced through producers who prioritise long-term sustainability and transparent trade.

The Colombian component comes from Forest Coffee, a producer-led organisation based in Tolima. Their agricultural journey began in 1995, with coffee cultivation expanding at El Vergel Estate in Fresno, Tolima in 2010. After harvesting their first varietals in 2015, founders Martha, Shady, and Elías Bayter began rethinking how Colombian coffee could be processed, valued, and shared globally.

Forest Coffee was formally established in 2019 with a clear mission: to connect growers directly with international roasters, ensure fair pricing, and unlock the full potential of Colombian coffee through innovation and education. Today, they support over 250 coffee-growing families, run multiple projects across Colombia, and operate with full transparency from farm to export.

The Brazilian component is sourced from Cerrado Mineiro, one of Brazil’s most established and respected coffee regions. This coffee forms part of the Café Delas Programme, which sources exclusively from women farmers and reinvests profits into initiatives that promote gender equality and empowerment within coffee-growing communities.

Together, these two origins form a blend that balances progressive processing with classic structure, the foundation of Bondi Blend.

How It’s Made

The Colombian coffee used in Bondi Blend is produced at El Vergel Estate using Red and Yellow Caturra varietals. Cherries are selectively harvested and undergo a 48–60 hour anaerobic fermentation, a controlled process that enhances sweetness and depth without pushing overt fruit intensity.

Drying begins naturally on raised beds under marquesinas until moisture reaches around 30%, followed by gentle mechanical drying in circular dryers kept below 45°C. After a short pre-stabilisation rest to intensify flavour development, the coffee is dried to its final moisture level and stabilised for 45 days in GrainPro bags, ensuring consistency and clarity.

The Brazilian component is naturally processed, benefitting from Cerrado Mineiro’s dry harvest climate and flat terrain, which allow for efficient harvesting and highly consistent drying. The region’s Denomination of Origin status reflects both its scale and its reliability, exactly what we look for when building a year-round house blend.

How It Tastes

Bondi Blend is roasted with approachability and balance at the forefront. Our goal isn’t to chase extremes, but to create a coffee that performs beautifully in bean-to-cup machines and espresso-based drinks, cup after cup.

The Brazilian coffee provides a solid chocolate base and creamy body, while the Colombian anaerobic component lifts the cup with refined sweetness and subtle complexity. The roast profile is carefully developed to enhance these qualities without introducing sharp acidity or bitterness.

In the cup, expect marzipan sweetness, creamy fudge, and smooth milk chocolate, with a rounded mouthfeel and low, gentle acidity. It’s a polished, dependable coffee, rich without being heavy, refined without being demanding.
