Australian Coffee Roots, Built on Community

After spending a decade in Australia, immersed in the fitness industry as a general manager and personal trainer, Paul found himself falling deeply in love with the vibrant coffee culture there. Living in Cronulla, just south of Sydney, Paul experienced how cafés became the heart of the community. Whether it was triathlon groups or local clubs, everyone seemed to gather, connect, and share moments over expertly crafted coffee.

When Paul returned to the UK in 2013, he knew he wanted to bring that same sense of connection and passion for coffee back with him. At the time, the UK felt dominated by impersonal chains, and he was inspired to create something more meaningful, rooted in community, quality, and authenticity.

Australian Origins

South of Sydney, Paul started to emerce himself in coffee culture.

Paul worked as a barista trainer helping others reach his level in coffee knowlege

A Journey Into the world of Coffee

Paul began honing his skills in specialty coffee with Harris and Hoole, learning from owners who were part of the original wave of Australian-inspired coffee shops in London. That experience, combined with his love for the coffee culture he lived in, deepened his commitment to creating something of his own. Over the following decade, Paul became a head roaster for several respected organisations, refining his understanding of coffee from bean to cup.

During that time, Paul also worked as a barista trainer, helping others learn the craft, from dialling in espresso shots to steaming milk and pouring latte art such as hearts, tulips, and rosettas. Sharing that knowledge and watching others grow their skills became incredibly rewarding, adding another layer of passion to his journey.

The Launch of Stables Coffee Co.

In December 2023, Paul and Scott brought it all together and launched Stables Coffee Co. It began not just as a coffee shop, but as a roastery too, creating and curating unique coffee profiles and flavours shaped by years of experience and a clear vision of what great coffee should be.

Since then, Stables Coffee Co. has become a community hub, with locals gathering in the space and freshly roasted coffee served both in the shop and across other cafés that share the same values. Whether in person or online, people now seek out Stables Coffee Co. for a local, independent roastery offering care and quality in every roast.

With over six speciality coffee roasts and two cafés, Stables Coffee Co. is an established independent coffee roastery rooted in quality and community.
