Where It Comes From

Didgeri Decaf is our single origin Colombian decaffeinated coffee, created for those who want all the flavour without the caffeine. It is sourced from expert farmers in the Huila and Tolima regions of Colombia, areas known for producing coffees with sweetness, balance, and structure, ideal qualities for decaffeination.

This coffee is known as El Búho (“The Owl”), a nod to late-night drinking without compromise. By starting with high-quality green coffee, we ensure the final cup retains depth, character, and clarity rather than the flatness often associated with decaf.

How It’s Made

Didgeri Decaf uses the washed sugarcane (Ethyl Acetate) decaffeination method, a natural and environmentally conscious process designed to preserve flavour.

Ethyl Acetate (EA) occurs naturally in coffee cherries, as well as in many fruits and vegetables. In this process, EA derived from sugarcane is combined with pure mountain spring water, and these are the only substances that come into contact with the coffee.

First, the beans are gently steamed to open their pores. They are then repeatedly rinsed with the EA solution, allowing caffeine to be removed while leaving flavour compounds intact. After decaffeination, the coffee is dried to 10–12% moisture and sealed with a neutral natural wax that protects freshness without affecting aroma or taste.

This gentle water-EA method avoids excessive heat or pressure, maintaining the coffee’s natural structure and preserving its full flavour potential.

How It Tastes

Our approach to roasting Didgeri Decaf is exactly the same as our fully caffeinated coffees, flavour first. The roast profile is designed to enhance sweetness and body while keeping the cup smooth and balanced.

In the cup, expect rich chocolate notes, soft almond nuttiness, and a gentle brown sugar sweetness, with a rounded mouthfeel and low acidity. It’s comforting, familiar, and satisfying, whether enjoyed in the evening or as a caffeine-free alternative at any time of day.
