Where It Comes From

Great Ocean Roast brings together two coffees shaped by innovation and environment, sourced from Bahia in Brazil and Tolima in Colombia. This blend is built to feel familiar and comforting, while still showcasing modern specialty processing.

The Brazilian component comes from high-elevation producers in Bahia, where growing conditions are excellent but harvesting presents challenges. High humidity and rainfall during the harvest season make traditional drying difficult, pushing producers to find creative solutions to protect quality.

The Colombian component is sourced through Forest Coffee, a producer-led organisation founded by Martha, Shady, and Elías Bayter. Their journey began in 1995, with cultivation expanding at El Vergel Estate in Fresno, Tolima in 2010. Forest Coffee was formally established in 2019 to close the gap between producers and roasters through transparent trade, innovative processing, and long-term community investment. Today, they work with over 250 coffee-growing families across Colombia.

How It’s Made

In Bahia, many producers transport freshly harvested cherries approximately 50km to the Caatinga biome, a neighbouring region with a warmer, drier climate more suited to controlled drying. During transport, the cherries undergo a short, closed fermentation inside the truck, typically lasting less than 24 hours. This unintentional but carefully monitored fermentation enhances sweetness and complexity before drying begins.

The Colombian coffee is produced at El Vergel Estate using Red and Yellow Caturra varietals. Cherries are carefully selected and processed using a natural anaerobic fermentation, lasting 48–60 hours, which encourages depth, sweetness, and rounded flavour development. Drying begins on raised beds under marquesinas before finishing gently in mechanical dryers below 45°C. The coffee is then stabilised for 45 days in GrainPro bags to ensure consistency and clarity.

Both components are naturally processed, allowing sugars to develop fully and creating a blend built around sweetness, body, and balance.

The Brazilian Bahia coffee provides body, warmth, and rounded sweetness, while the Colombian anaerobic natural adds soft complexity and depth without pushing overt fruit intensity. Our roast profile is balanced and versatile, making this coffee suitable for both espresso and filter brewing.
