Where It Comes From

Uluru is a single origin Colombian coffee, sourced from producers in Tolima, Colombia, the same region and producer network behind our Bondi Blend. This coffee comes from farmers working with Forest Coffee, a producer-led organisation built on transparency, innovation, and long-term sustainability.

Forest Coffee’s agricultural journey began in 1995, with cultivation expanding at El Vergel Estate in Fresno, Tolima in 2010. Founded formally in 2019 by Martha, Shady, and Elías Bayter, Forest Coffee was created to connect growers directly with roasters, ensuring fair pricing while pushing the boundaries of processing and quality.

Today, Forest Coffee supports over 250 coffee-growing families across Colombia, combining technical expertise with a strong community focus. Uluru represents the more experimental side of their work, a coffee designed to showcase just how expressive Colombian coffee can be when time and care are allowed to do their work.

How It’s Made

Uluru is processed using a natural 200-hour cherry fermentation, an extended and carefully controlled method that allows flavour to develop slowly and deeply.

After harvesting, ripe cherries are left intact and fermented for approximately 200 hours, encouraging complex sugar development and enhanced aromatic intensity. This slow fermentation amplifies sweetness and fruit clarity while maintaining balance.

Once fermentation is complete, the cherries are dried gradually under controlled conditions to stabilise the coffee and lock in flavour. This extended natural process requires close monitoring and expertise, but the result is a coffee with remarkable depth, structure, and vibrancy.

How It Tastes

Uluru is roasted with a focus on clarity, vibrancy, and balance, allowing the extended fermentation to express itself without overpowering the cup. Our roast profile is carefully restrained to preserve acidity, sweetness, and aromatics.

In the cup, expect juicy nectarine sweetness, smooth honeyed depth, and a lively kumquat acidity, creating a cup that feels bright, layered, and memorable. The extended fermentation gives the coffee a rounded mouthfeel and long, clean finish, while the natural process keeps the fruit character front and centre.
