Where It Comes From

Winter Wallaby is our seasonal winter blend, created to offer warmth, comfort, and depth during the colder months. The blend combines Ethiopian and Brazilian coffees, chosen for how their natural characteristics complement one another and for the quality and integrity of the producers behind them.

The Ethiopian component is a naturally processed Grade 1 coffee sourced from Konga Amederaro Station in Konga village, Yirgacheffe. Located at approximately 2,000 metres above sea level, the station works with 1,890 smallholder farmers whose coffees are supported by the Toracho River. Konga Amederaro has built a global reputation for excellence, placing 7th in the inaugural Ethiopia Cup of Excellence and reaching the final table at the Taste of Harvest competitions in 2018 and 2019, a reflection of uncompromising quality standards.

The Brazilian component comes from Cerrado Mineiro, one of Brazil’s most established coffee regions. This coffee is sourced through the Café Delas Programme, which works exclusively with women farmers and reinvests profits into initiatives that promote gender equality, education, and empowerment within coffee-growing communities.

How It’s Made

In Ethiopia, the coffee is grown by smallholder farmers cultivating Jarc, an indigenous Ethiopian heirloom varietal, on small plots around their homes, commonly referred to as “garden coffee”. These heirloom varietals grow wild across Ethiopia and are celebrated for their complexity and expressive flavour potential.

The Ethiopian coffee is naturally processed, with cherries sun-dried to concentrate sugars and develop rich, fruit-forward characteristics. The high altitude, fertile soils, and consistent rainfall of Yirgacheffe allow for slow cherry maturation, resulting in dense beans with layered flavour.

The Brazilian coffee is also naturally processed, benefiting from Cerrado Mineiro’s dry harvest climate and flat landscape, which support consistent drying and stable flavour development. This reliability is essential for maintaining balance and structure within a seasonal blend.

How It Tastes

Winter Wallaby is roasted with the intention of creating a coffee that feels warming, rounded, and indulgent, without losing clarity or balance. Our roast profile is slightly more developed than our lighter offerings, enhancing sweetness and body while keeping acidity smooth and controlled.

In the cup, expect crème brûlée sweetness, toasted nut richness, and ripe stone-fruit notes, with a creamy mouthfeel and gentle acidity. The Brazilian component provides depth and structure, while the Ethiopian coffee brings lift and fruit complexity.
